Preface by Kate Moss :
The Hemingway Bar is like a home away from home for me. Colin Field, the head barman and dear pal of mine, is like a four part combination of gallant host, fairy godfather, conceptual artist and spiritual guide. He often knows what I want to drink before I order it- usually a French 76 with vodka, champagne, and a splash of lemon. He also garnishes the cocktails with fresh flowers for the girls; its an inspired touch. And Colin can gauge any situation. Using his years of experience and his finely tuned social radar, he suggests delicious alternatives to suit a mood and often invents new and entertaining concoctions on the spot. Have you ever tried a Ritz Side Car? It’s one of the most expensive cocktails in the world and it’s an incredibly decadent and stylish way to toast to the end of another incredible stay in Paris. Or next time you could try my cocktail, the Kate Moss. Isn’t it every girls dream to have a cocktail named after them by Colin and put into the official records in the age-old Hemingway Bar ledger?
To my dear Colin, I wish you all the best with your new book. You are a wonderful friend and a true artist. Thank you for all the memorable nights at the Hemingway. I can’t tell you the number of times I’ve met with friends planning to attend an event or dinner and your inspired cocktails and infectious anecdotes have meant we never made it out of the revolving doors. You are the keeper of the eternal flame and the keeper of many great secrets.
